salmon burger
ingredients
all
14 3/4 oz salmon
canned and drained
1/4 cup green onion
sliced
1/4 cup pimientos
diced and drained
1/2 tsp lime zest
2 tbsp lime juice
freshly squeezed
2 tsp dijon mustard
1/2 cup plain greek-style yogurt
1/2 cup panko
japanese breadcrumbs
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 whole egg
large, lightly beaten
1 tbsp vegetable oil
4 whole whole wheat buns
or with poppy seeds
lettuce

onion

Combine all ingredients in a mixing bowl. Form into 4 large patties about 1/2-inch thick. The patties will be soft.

Heat vegetable oil in a non-stick skillet over medium heat. Add the patties, and cook for 5 minutes on each side.
