Smoked Salmon Breakfast Sandwich
ingredients

1/4 cup olive oil
3 cloves garlic
finely chopped
1 loaf your favorite hard crusty bread
sliced into 1/4 to 1/2 inch slices (whole grain preferably)
4 whole tomatoes
sliced in rounds
3 whole cucumbers
sliced on bias
sea salt and pepper to taste
1 lb smoked salmon
4 whole hard-boiled eggs
sliced
1 jar capers
small, drained and rinsed

Combine olive oil and garlic in a bowl and let sit for 30 minutes to one hour to allow garlic to permeate oil.

While oil and garlic are combining arrange sliced bread on cookie sheet in a single layer.

Lay out sliced tomatoes and cucumber on cutting board or counter and season with sea salt and pepper to taste.

Lightly brush bread with oil and garlic mixture.

Lay slices of cucumber on bread, top with tomato, salmon, eggs and sprinkle capers on top. Season with a touch more pepper (capers have plenty of salt, so be careful not to over salt).
notes
For a crispier bread, brush with oil and garlic mixture and bake at 325°F for 5-10 minutes.
