scallop ceviche

ingredients

1 lb bay scallops
1/2 cup freshly squeezed lemon juice
1/2 cup freshly squeezed lime juice
3 whole jalapeño chilies
chopped
3 tbsp cilantro
or italian parsley, chopped
1 whole sweet red pepper
or large tomato, chopped
tostadas
or tortilla chips
Mr. Oguro clipped this recipe from the newspaper. While easy enough to make for a weeknight, Colin and Carm usually make this on the weekends right after they get fresh scallops from the market.

Combine scallops, lime and lemon juices, chilies, cilantro and red pepper. Marinate in refrigerator at least 2 hours.

Serve with tostadas or tortilla chips.
