nom nom paleo's garlic mashed cauliflower

ingredients
all
1 head cauliflower
large, cut into uniform pieces
kosher salt
5 cloves garlic
2 tbsp ghee
or fat of choice
freshly ground black pepper
1/4 tsp freshly grated nutmeg
optional

This was one of the first dishes we made when we decided to go paleo. We were skeptical that it would taste good, but our friends tasted it the next day and they couldn't even tell that it was cauliflower. :)

Set the steamer basket inside of a large pot, fill it with about 2 inches of water, then bring it to a boil over high heat.

Wash and cut the cauliflower. Since it will all be mashed up inside of a food processor, it doesn't need to be cut into pretty pieces, but they should all roughly be about the same size. Season the cauliflower with salt.

When the water comes to a boil, transfer the cauliflower and garlic onto the steamer basket. Cover and steam for about 10 minutes.

Drain the steamed cauliflower and garlic then transfer it into a food processor. Add ghee, pepper, and nutmeg. Pulse until consistency is smooth.
