Smoked Salmon Cakes
ingredients
all
4 oz Wild Alaska Sockeye Smoked Salmon
14 3/4 oz Wild Salmon in can
drained (Bumble Bee Pink Salmon or 12 oz Wild Caught Sockeye Salmon in can)
3 Scallions
chopped
1/4 cup Fresh dill
or 1 Tbs dried dill
Freshly ground black pepper
to taste
2 tsp Dijon mustard
2 Eggs
2 Tbs Coconut flour
2 Lemon zest
2 Tbs Olive oil
Butter lettuce
to serve
This recipe is so tasty that you don't need any sauce. Salmon is high in Omega-3 and is good for the heart. Coconut flour to make it gluten-free.

In a big bowl, add chopped smoked salmon and drained salmon in can.

Add scallions, dill, pepper and mustard

In a separate bowl, whisk eggs and add to mixture.

Add lemon zest and coconut flour. Mix well and form into patties.

Heat pan, add 1Tbs olive oil. Add Salmon Cakes and cook for 4-5 minutes each side until golden brown.

Cook remaining salmon with the remaining oil.

Serve with butter lettuce
