hong's brussels sprouts with bacon

4 slices bacon
diced
1 lb brussels sprouts
cleaned and halved
salt and pepper
Our friend Hong whipped up this simple and tasty dish one night when we spontaneously decided to cook dinner instead of dine out. This is perfect for a low carb diet and goes great with grilled meat.

Cook the bacon pieces for about 10 minutes in a medium skillet over low heat to render the fat.

Add the brussels sprout halves to the skillet and toss to coat with the bacon bits and drippings. Season with salt and pepper and toss again.

Transfer the mixture to a baking sheet lined with parchment paper. Bake at 400°F for about 15 minutes, or until the brussels sprouts are tender and its edges are lightly browned.

Transfer to serving bowl and serve immediately.
