presliced if available to save you time
marinated white anchovies

Inspired by the sandwiches at Togo's and elsewhere, we developed this recipe for hummus sandwich. We usually use more substantive, whole wheat pitas for this recipe since the sandwich is so flavorful. This is a delicious lunch for a warm day.

Since you cradle the pita in your hand and assemble the sandwich in one fell swoop, you'll need to set up the following mise en place. Line up the dijon and mayo and pull out designated spreaders for each. Wash the tomato and lettuce. Slice the tomato and dry the lettuce. Pull out a spoon for the hummus. Drain some of the pepperocini over paper towels. Have the anchovies and red onions ready to go if you're using them.

Halve the pita bread and then warm it in the toaster at the lowest setting. In addition to warming the pita, it also softens it and makes it easier to handle and stuff.

Once the pita is cool enough to handle, spread dijon mustard along half of the inside. Spread mayo on the opposite side. Add just enough to moisten each bite of the pita.

Add the tomato on top of the mayo then layer on the lettuce.

Spoon in the hummus and distribute the pepperocini on top of the hummus.

Add the anchovies and/or red onions if using.

Serve and enjoy immediately, with a side of hot sauce if you prefer.
