We are intrigued by any cocktail with thyme in it, so we instantly ordered this when we dined at Jean Georges’ ABC Kitchen in NYC. The drink menu didn't list ingredients, so we found the recipe online at Food and Wine’s website. Thank goodness for the internet! :)

1 | In a medium saucepan, combine the water and sugar and bring to a boil, stirring to dissolve the sugar. |
2 | Add the thyme, cover and let it stand for at least 2 hours or overnight. |
3 | Add the lemon juice and strain the syrup. The syrup can be refrigerated for up to 5 days. |
4 | Rim a highball glass with sugar. |
5 | In a cocktail shaker, muddle the lemon wedges with the lemon-thyme syrup. |
6 | Add ice and vodka and shake well to combine. |
7 | Double strain the vodka mixture into the highball glass and top with club soda. Garnish with the thyme sprig and serve. |
